Tonight's Thai Chicken

Ingredients:

4oz can Panang Curry Paste
1 can coconut milk
4 chicken breasts
1/4 cup basil - chopped
Jasmine Rice
salt
pepper
olive oil

Directions:

Cook 2 cups dry rice.  Cube chicken and stir-fry with olive oil, basil, salt and pepper until throughly cooked.  Add curry mixture to chicken and heat for 5 minutes.  Serve over rice.http://www.roundeyesupply.com/Basil-Leaves-s/976.htm
