Tonight's Roasted Almonds


3 cups large raw Almond pieces
2 cups brown sugar
1 cup sugar
3 tablespoons cinnamon
1 tablespoon vanilla
dash of salt
one egg white
one teaspoon water


preheat oven to 250.  Lightly beat egg white, add water, beat again until frothy.  Add Almonds and coat well.  Combine all other ingredients and mix well.  Line baking pan with aluminum foil.  Take nuts out of mixture and put in to the baking pan.  Bake 45 minutes, shaking pan occasionally, until browned.
