Tonight's Rosemary Chicken

Ingredients:  


1/2 cup bread crumbs
2 tablespoons rosemary
1 teaspoon freshly grated lemon peel
1/2 teaspoon ground pepper
4 boneless chicken breasts
6 tablespoons olive oil
1/2 cup dry white wine or chicken broth


Directions:


Mix bread crumbs with rosemary, lemon peel and black pepper. Roll chicken in crumbs to coat. Heat olive oil in large skillet over medium- high heat. Add chicken; cook until golden brown, about 2 minutes per side. Add wine, reduce heat to low, cover and cook until chicken meat turns white and loses pink color, about 8 minutes.

Tonight's Thai Chicken

Ingredients:

4oz can Panang Curry Paste
1 can coconut milk
4 chicken breasts
1/4 cup basil - chopped
Jasmine Rice
salt
pepper
olive oil

Directions:

Cook 2 cups dry rice.  Cube chicken and stir-fry with olive oil, basil, salt and pepper until throughly cooked.  Add curry mixture to chicken and heat for 5 minutes.  Serve over rice.http://www.roundeyesupply.com/Basil-Leaves-s/976.htm

Tonight's Banana Pudding

Ingredients:

Banana Pudding
4 ripe bananas
Cool Whip
Vanilla Wafers

Directions:

Pre heat oven to 350 degrees.  Slice banana in 1/4 inch slices. Layer vanilla wafers, pudding and banana slices in baking dish.  Bake for 20 minutes.  Serve with cool whip.

Tonight's Baked Tomatoes

Ingredients:

4 large ripe tomatoes
1/8 cup graded mozzarella cheese
1/4 cup bread crumbs
1 clove garlic - minced
1 sprig parsley - chopped
1/2 teaspoon dried oregano
1 tablespoon olive oil
salt and pepper - dash


Directions:

Preheat oven to 400 degrees F.  Coat cookie sheet with oil or spray.  Slice tomatoes to 1/4 inch thick and spread close together on cookie sheet.  Lightly coat tomatoes with olive oil, sprinkle with cheese, bread crumbs, garlic, salt and pepper and oregano.

Bake for 22 minutes or until cheese is toasted.

Tonight's Egg Noodle Soup

Ingredients:

6 cups water
1 cup egg noodles
3 tbs chicken base
4 eggs

Directions:

Cook noodles and chicken base with water and add 4 eggs (lightly beat) and let cook until noodles are done

Tonight's Cool Jello Cake

Ingredients:

1 pk white cake mix
two pks jello gelatin  - your favorite flavor
large container of cool whip
1 straw

Directions:

Follow directions on cake mix
let cake completely cool, polk the straw into cake to make holes in cake, every half inch or so all the way to bottom of cake, make jello as directed on box, let cool a little make sure it is still liquid and pour into holes you made into the cake.   Use the Cool Whip as the icing and put into refrigerator.   Ready in one hour.  Keep cool.

Tonight's Roasted Almonds

Ingredients:

3 cups large raw Almond pieces
2 cups brown sugar
1 cup sugar
3 tablespoons cinnamon
1 tablespoon vanilla
dash of salt
one egg white
one teaspoon water

Directions:

preheat oven to 250.  Lightly beat egg white, add water, beat again until frothy.  Add Almonds and coat well.  Combine all other ingredients and mix well.  Line baking pan with aluminum foil.  Take nuts out of mixture and put in to the baking pan.  Bake 45 minutes, shaking pan occasionally, until browned.

Fried Tilapia

Ingredients:

4 Tilapia fillets (amount can vary)
2 eggs
2 cups milk
2 cups flour
2 cups bread crumbs
2 cups of lemon juice
salt
peanut oil

Directions:

Cut Tilapia Fillets down the middle long ways, then cut into cubes.  Mix milk and eggs in large bowl.  Mix flour and bread crumbs in large bowl.   Add a few cubes of tialapia into milk mixture then into the flour/bread crumbs and coat really well.

In iron skillet get pour peanut oil and inch or two high and heat.  Add the tilapia with bread crumb mixture and fry to golden brown each side.

Drain fish on paper towel, sprinkle with salt and lemon juice.   Lemon juice can be added in side dish to dip fish into as well.
